Stuffed Bell Peppers Using Leftovers

What do you do with leftovers? Yesterday I made some Spicy Lettuce Wraps for dinner and had some cooked ground sirloin left. I didn't want to just throw it away so I put it into a food container and stored it in the fridge. I wasn't really sure what I was going to use it for though.

I had a green bell pepper in my fridge, the leftover ground sirloin, and the sauce I made for the Spicy Lettuce Wraps. In my cupboard, I had some Neilly's Foods Jerk Rice & Black Beans Mix and canned corn (which I drained). I put a 1/2 cup of the Rice & Black Bean mix, which was WAY too much, put 3/4 cup water and 1/4 tsp olive oil into a microwave dish and cooked the mixture for 12 minutes on medium heat. While the mixture was cooking, I prepped the bell pepper.

After the rice was done, I added the ground sirloin, and corn to the rice mixture. I added the combined mixture to the bell pepper and baked on 400 degrees for 25 minutes (time may be different depending on your oven). I took the bell pepper out of the oven and added 2 tablespoons of the sauce on top.

I was a quick way to utilize leftovers from the night before. It was also quick to prep and cook. Perfect for all you busy folks that want a healthy meal. If you decide to try this (along with the other meals I have posted), let me know how it turns out in the comments below.
